When it is tomato season in the garden, this Italian tomato salad recipe is a regular treat at our dinner table. It has been in the Romano family as long as I can remember. I know that my father, Joseph Romano enjoys a fresh tomato salad with a slice of homemade bread and “finito” that is his noon meal. Who would think that a simple salad like this could turn into an easy healthy meal? We all know today the health benefits of tomatoes , but then add garlic (natures wonder antibiotic) and a little extra virgin olive oil (which is a cholesterol buster) this salad packs a heart healthy wallop!
Note: If I am making this salad out of season, I try to choose the highest quality organic tomatoes, and then allow them to ripen if need be in a basket on the counter.
Now, I have to be honest and say that I always guess amounts when I make this salad. There is no recipe written on paper per say, we all pretty much use our own judgment when it comes to perfect quantity of all the ingredients. Not to worry though, it is always fantastic!
