Italian Garlic Tomato Salad Recipe

It is also so quick and easy to make and combines beautifully with many meals including summertime barbeques.

When it is tomato season in the garden, this Italian tomato salad recipe is a regular treat at our dinner table. It has been in the Romano family as long as I can remember. I know that my father, Joseph Romano enjoys a fresh tomato salad with a slice of homemade bread and “finito” that is his noon meal. Who would think that a simple salad like this could turn into an easy healthy meal? We all know today the health benefits of tomatoes , but then add garlic (natures wonder antibiotic) and a little extra virgin olive oil (which is a cholesterol buster) this salad packs a heart healthy wallop!

Note: If I am making this salad out of season, I try to choose the highest quality organic tomatoes, and then allow them to ripen if need be in a basket on the counter.

Tomato Salad Recipe

Ingredients
  • 4-6 medium sized ripe tomatoes
  • 2 med. size cloves of garlic, chopped in small chunks
  • 2-3 tbsp extra virgin olive oil (3 for 6 tomatoes)
  • 1 heaping tsp oregano
  • 1/2 tsp salt
  • Optional: 2 tbsp sweet onion, chopped

Now, I have to be honest and say that I always guess amounts when I make this salad. There is no recipe written on paper per say, we all pretty much use our own judgment when it comes to perfect quantity of all the ingredients. Not to worry though, it is always fantastic!

Preparation
  1. Chop tomatoes up in larger bite size pieces, (not tiny cubes, my father had to set me straight on that one)
  2. Add in chopped garlic or sweet onion.
  3. Gently stir in olive oil until tomatoes are well coated
  4. Stir in oregano and salt.
  5. Refrigerate until ready to serve.
  6. The tomato juice mixed with the olive oil make the dressing so stir it occasionally.
