Looking for a delicious nutritious Italian sausage soup recipe? Michele Romano Recipes has the best sausage soup ever. Very unique and very addicting! It is an awesome change from chicken, turkey or ham soup. These are all fantastic soups however, this soup recipe is unique and flavorful. It is one of my easy and healthy Italian cooking recipes.

You can choose the amount of spiciness by using mild or hot Italian sausage in this soup. Fresh herbs always add the best flavor to soups so I use them when ever possible.

Sausage Soup Recipe

  • 1 lb hot or mild Italian sausage (bulk or in casings)
  • 2 tbsp extra virgin olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1/3 cup fresh chopped fennel or 1/8 tsp dried
  • 5 medium carrots, thinly sliced
  • 2 stalks celery, chopped
  • 1 - 28 oz can tomatoes, chopped
  • 4 tbsp fresh basil, chopped (2 tsp dried)
  • 6 cups chicken broth (homemade or store bought.)
  • 2 cups water
  • 3/4 cup of orzo or tiny pasta such as tubettini or ditali
  • 1 - 1/2 tsp sea salt
  • Pepper
  • 1/2 - 3/4 cup fresh grated Romano or parmesan cheese.
  • Optional: garnish with 2 more tbsp of fresh chopped fennel
  1. Heat oil in pot, fry Italian sausage (If you are using sausage in casings cut in rounds, if bulk, break it up as you scramble fry it.
  2. Add in onion, garlic, celery and carrots, stir fry for 5 minutes
  3. Stir in tomatoes, parsley, basil and chicken broth. Simmer for 15 - 20 minutes.
  4. Add pasta, salt and pepper. Cover and cook until pasta is al dente (about 10 minutes)
  5. Serve hot with grated cheese.
