Dreamy and creamy perfectly describe this decadent pumpkin cheesecake recipe!! This is one of my all time favourite Italian dessert recipes for sure. It is reasonably quick and easy to make if you are expecting company. Another bonus is that there is not a ridiculous amount of sugar added to this recipe, although its richness will fool you. I promise you, if you are a cheesecake fan..... this is one recipe that you will want to make over and over again.

Dreamy Pumpkin Cheesecake Recipe

Ingredients:
  • Graham crust for 9 inch glass pie plate or 11x7 glass dish.
  • 1 1/2 cups graham cracker crumbs
  • 5 tbsp melted butter

Mix together and pat into dish. Bake at 350 degrees for 8-10 minutes.

  • 2 - 250 gram packages or tubs cream cheese
  • 3/4 cup sugar ( I used organic cane sugar)
  • 1 cup canned or fresh pureed pumpkin
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1/8 tsp nutmeg
  • Dash of ground cloves
  • 3 organic eggs
  • Small carton whipping cream
  • Caramel syrup for drizzling (I used coconut nectar, it tastes better than caramel!)
Preparation:
  1. Using a mixer, blend cream cheese and sugar until creamy.
  2. Add in pumpkin, vanilla, and spices, mix well.
  3. Add eggs until blended, do not over beat once you add eggs.
  4. Pour this mixture over graham cracker crust.
  5. Bake in oven at 325 degrees for 45 minutes or until knife comes out clean from centre.
  6. Refrigerate for 3-4 hours.
  7. Top with whipping cream.
  8. Lightly drizzle caramel back and forth over the top.
  9. Lightly dust the top with cinnamon.
Prep time: 90 minutes
