Roman style baked Halibut recipe with tomatoes, lemon, feta, zucchini, and garlic. A fish dish with a distinct Italian twist to it! Which in my humble opinion boosts the flavor of the halibut to delightful heights! One of my favorite Italian seafood recipes.
Unfortunately, halibut season only comes around once a year. (In the springtime is when it shows up in supermarkets). My love for this ocean dweller has led me to create several different simple dinner recipes using halibut...just for the hellibut! Okay, I know, stupid joke lol. As I was saying, Roman style halibut is one of my favorite halibut recipes because it has a unique zesty zing to it. We know that all fish is a good source of Omega 3's. So good for your heart, brain and will keep your skin looking younger too! Some real "fishful" thinking is that one day my husband Dan and I will take the time to go halibut fishing!!
Side dish ideas: Quinoa and brown rice or Italian potato cake with a simple Italian salad/artichoke dressing.
