A rich velvety Homemade Italian Gnocchi Recipe covered with either a dreamy creamy or a zesty tomato based sauce! This is an authentic Michele Romano Italian Pasta recipe.

Gnocchi is a marvellous way to venture out, if you haven't before, (we are talking Gnocchi here lol), and make your own homemade pasta! I never realized how easy and fun these would be to make. By the way, both sauces are equally delicious. It is just a matter of preference which to choose. I will provide the simple cream sauce recipe below. Homemade Italian Gnocchi Recipe

Gnocchi Ingredients:
  • 4 large white baking potatoes
  • 3 egg yolks
  • 2 tbsp. melted butter
  • 3 tbsp. grated Romano or Parmesan
  • 2 1/2 - 3 cups unbleached organic flour
Cream Sauce Ingredients:
  • 2 tbsp. butter
  • 6 oz. of bacon or pancetta (cut into cubes)
  • 8 small fresh basil or sage leaves
  • 1 cup heavy cream
  • 1 cup grated Parmesan or Romano cheese
Gnocchi Preparation:
  1. Prick potatoes and then wrap in tinfoil and bake for 1 hour or until tender.
  2. Let potatoes cool, then peel and mash well or put through a potato ricer.
  3. Mix in the egg yolks, parmesan and butter, then gradually stir in the flour.
  4. Work with your hands until a loose dough is formed, then transfer onto a floured surface.
  5. Work in enough flour to make a soft pliable dough, but not sticky.
  6. Divide the dough into approx. 12 portions, rolling into a rope about ½ inch thick, cut each rope into 1/2 inch lengths.
  7. Press your finger into each piece of dough to make a concave shape, then roll a fork over the outer surface to make deep ridges. Fold the outer edges in toward each other to make a hollow in the middle.
  8. Bring salted water to boil, add gnocchi in batches (about 20 at a time) stirring gently. Cook 1-2 minutes or until they rise to the surface. Remove with a slotted spoon.
  9. Drain and put in greased casserole dish. Preheat oven to 400 degrees.
Cream Sauce Preparation:
  1. To make sauce melt butter, add bacon or pancetta, fry until crisp.
  2. Stir in sage or basil leaves and cream.
  3. Season with salt, pepper and simmer until thickened.
  4. Pour the sauce over the gnocchi, toss gently.
  5. Sprinkle the Parmesan or Romano on top.
  6. Bake for 10 to 15 minutes or until golden on top.
