Garlic Chicken Pasta Recipe

Simple to make and not extremely time consuming. Garlic is the main focus and flavor used in creating this incredibly satisfying garlic chicken pasta recipe.

Prepare the chicken ahead of time in your skillet by marinating in olive oil and fresh garlic. Meanwhile (back at the ranch), simply boil your pasta until al dente. Quickly toss pasta into zesty, aromatic garlic sauce . This garlic chicken pasta recipe will compliment any type of pasta you choose to use. I used ancient grains non GMO spaghettini mixed with catelli smart spaghettini. Remember you can be creative with your choice of pastas, such as whole wheat, gluten free, brown rice pasta, Quinoa and organic pastas as well.

SALAD SUGGESTION! I served this pasta dish with a simple homemade Caesar salad, (see recipe below). It was the perfect combination, like eating a garlic Caesar, chicken pasta salad! So delicious!!

Note:If available to you, I like to use enamel pots and fry pans for making my sauces. Most Italians swear by them for making the best tasting sauces. In my experience, I have found it to be true!

Garlic Chicken Pasta Recipe

Ingredients:
  • 3 chicken breasts, sliced
  • 1/3 cup extra virgin olive oil
  • 3 tbsp. butter
  • 6-8 larger cloves of garlic, minced
  • 1/2 tsp crushed red pepper flakes
  • 12 salted capers
  • 1/2 tsp salt
  • pepper
  • 1/2 cup fresh chopped Italian parsley
  • 1/3 cup fresh grated Romano, Pecorino or Parmesan cheese
  • 1-lb Spaghettini (454 grams)
Preparation:
  1. Place oul and butter in a large skillet or fry pan.
  2. Add crushed garlic gloves, red chili's and capers.
  3. Add sliced chicken breasts, salt and pepper.
  4. lightly toss and let sit to marinate.
  5. Meanwhile boil lightly salted water and cook spaghettini until al dente, (chewy)
  6. Saute chicken mixture in fry pan,on medium-high heat just until chicken breast peices are cooked through.
  7. Drain pasta and add it to fry pan and gently stir fry, making sure all pasta is covered with the oil/garlic sauce.
  8. Toss in fresh parsley and half of the fresh grated cheese.
  9. Serve hot placing chicken breast peices on top of pasta with extra cheese, salt and fresh pepper to taste.

Caesar Salad Recipe

Ingredients:
  • Fresh organic romaine
  • 3/4 cup hellmanns mayonnaisse
  • 1/3 cup extra virgin olive oil
  • 1/4 cup Parmesan cheese
  • 2-3 cloves garlic, minced
  • 2 tbsp. fresh squeezed lemon juice
  • 1/2 tsp salt
  • 1/4 tsp pepper
Preparation:
  1. Mix all ingredients in a jar or container with a lid. Shake vigourlsy and store in refridgerator.
  2. Optional: I like to sprinkle in some roasted sunflower seeds or dried cranberries on occasion.

Health Benefits: Garlic lowers cholesterol levels and blood sugar which helps prevent heart attack and stroke. When crushed, raw cloves releases allicin, which has been shown to be a more potent antibiotic than penicillin and tetracycline.
