Italian Frosted Cookie Recipe

Quick and easy this Italian frosted cookie recipe is one of the best Italian cookie recipes I know! Wait until your family tastes these delightful morsels, they will become a constant household request. I have to hide them from my husband Dan or they will be gone within the day!

By the way, I found this cookie recipe in an old Italian cookbook that belonged to my Dad. Back in the day, Italians generally had large families. I cut this amazing recipe in half and tweaked it to make them healthier. I call these babies the cupcake of cookies!

Note: Sprinkle toasted coconut on top for nutrition and a fancier look and taste!

Frosted Cookie Recipe

Ingredients
  • 1/2 cup butter, room temperature
  • 1/2 cup organic cane sugar
  • 2 eggs
  • 1/4 cup milk, soy milk or almond milk
  • 1/2 tsp vanilla extract
  • 1/2 tsp anise flavoring (I could not find in grocery store, so I crushed fennel seeds, added 2 tsp water and poured through strainer)
  • 2 cups flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup coconut to roll cookies in
Preparation
  1. Preheat oven to 350 degrees.
  2. In a large bowl, using an electric mixer, cream butter and sugar until fluffy.
  3. Beat in eggs, milk, extract and anise flavoring.
  4. Gradually add flour, baking powder and salt to creamed mixture and blend well.
  5. Drop approximately 1 rounded tsp onto lightly greased cookie sheet.
  6. Bake for 10 minutes or until lightly browned on bottom.
  7. Put on wire racks to cool.
Frosting Ingredients
  • 1 1/2 cups icing sugar
  • tbsp butter, softened
  • 1 tsp vanilla
  • 1/8 cup milk
Preparation
  1. Beat the above ingredient together until smooth.
  2. Spread icing on cooled cookies.
  3. Dip iced top of cookies in coconut.

Prep time: 20 min.
Cook time: 10 min.
