Italian Pepper Fried Eggplant Recipe

My Italian pepper fried eggplant recipe is much more than just a delicious side dish! I love how the spicy tanginess of this eggplant dish brings a carnival of flavor to several different entrees!

Let me just put a few ideas into your minds to ponder on. Serve fried eggplant as a side dish to a succulent pan fried steak, pork chops or oven roasted chicken breast. Why not serve it for brunch to make your scrambled eggs sing good morning? Or give a baked potato some pizazz and top it with fried eggplant and sour cream? The possibilities are endless!

Besides being an incredibly healthy creation, my fried eggplant is also an outstanding appetizer recipe!

This Is My Favorite Fried Eggplant Recipe

Spoon some of the fried eggplant on top of sliced baguettes Image: Fried Eggplant Baguettesor homemade Italian bread and top with fresh grated Romano cheese and Italian parsley, then bake in oven for 10-12 minutes. Oh so yummy, your family or your guests will love, love these!

Fried eggplant is so simple and quick to make as well. It can be made ahead of time and stored in fridge for later use.

Fried Eggplant Recipe

Ingredients:
  • 2 tbsp. extra virgin olive oil
  • 2 cloves garlic, minced
  • 2 green onions or chives, chopped
  • 1 medium size eggplant, peeled, sliced in strips
  • 1 green pepper, sliced in strips
  • 1 yellow pepper, sliced in strips
  • 6 Roma tomatoes, sliced in half, then into strips
  • 1/2 tsp salt (or to taste preference)
  • 1/4 tsp pepper
  • Aged balsamic vinegar for drizzling
  • Fresh grated Romano or Parmesan cheese to sprinkle on top.

If making appetizers on baguettes, Italian parsley and 1 Kalamata olive on top of each one, make the perfectly delicious garment!

Preparation:
  1. Place oil in large frying pan, add garlic and green onions.
  2. Saute for 3 minutes on medium heat.
  3. Stir fry in eggplant, peppers and tomatoes.
  4. Add salt and red pepper flakes.
  5. Simmer on low heat, stirring often, for 15 minutes.
  6. Last, stir in fresh torn basil leaves.
  7. Drizzle with balsamic vinegar.
  8. Sprinkle fresh Romano or Parmesan on top.

Prep time: 20 min.
Cook time: 20 min.
