My Italian pepper fried eggplant recipe is much more than just a delicious side dish! I love how the spicy tanginess of this eggplant dish brings a carnival of flavor to several different entrees!
Let me just put a few ideas into your minds to ponder on. Serve fried eggplant as a side dish to a succulent pan fried steak, pork chops or oven roasted chicken breast. Why not serve it for brunch to make your scrambled eggs sing good morning? Or give a baked potato some pizazz and top it with fried eggplant and sour cream? Spoon some of the fried eggplant on top of sliced baguettes or homemade Italian bread and top with fresh grated Romano cheese and Italian parsley, then bake in oven for 10-12 minutes. Oh so yummy, your family or your guests will love, love these!
