Italian Chicken Chili Recipe (Peperoncino)

Wow is the only word to describe this amazing Italian Chicken Chili Recipe . Image: Italian Chicken ChiliIt is one of my favorite fall time Italian chicken recipes. So flavorful, so comforting, with just the right amount of spiciness. In fact, I'm making it right now!

My Italian chicken chili recipe is low in fat as well as having some great health benefits with red and yellow peppers, zucchini and chickpeas also known as garbanzo beans. It is excellent topped with a four Italian cheese blend such as, Mozzarella, Provolone, Gouda and Parmesan, made by Saputo and found in most supermarkets. Also, a sharp grated cheddar cheese is tasty as well.
Note: Of course to keep it low fat, lay off the cheese!

Italian Chicken Chili Recipe

Ingredients
  • 3 boneless chicken breasts, cubed
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1-1/2 large onions, chopped
  • 1 yellow pepper, chopped bite size
  • 1 red pepper, chopped bite size
  • 2 small zucchinis, cubed
  • 2 fresh Roma tomatoes, diced
  • 2 tbsp chili powder
  • 2 tsp oregano
  • 1 tsp basil
  • 1 tsp paprika
  • 1 tsp cocoa powder
  • 3/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp dried chilies
  • 1 28 oz can whole (dice them) or diced tomatoes
  • 1 cup chicken broth
  • 1/2 cup tomato sauce
  • 1 - 19 oz can chickpeas (drained)
Preparation
  1. In a large pot, fry cubed chicken in oil stirring frequently until almost cooked through.
  2. Add garlic, onions saute for 5 minutes. (Chicken should be cooked through now)
  3. Add peppers, zucchini, Roma tomatoes, continue to saute a bit until vegetables are starting to soften, but still firm.
  4. Stir in spices and all remaining ingredients except chickpeas.
  5. Simmer covered on low heat for 30 minutes.
  6. Add chickpeas and simmer uncovered for another 15 minutes.
  7. Serve hot with cheese of choice on top if desired.

Prep time: 30 min.
Cook time: 45 min.
